Chef Arif Springs‘ philosophy is grounded in the 8 directions in Hindu dharma. “In nature, each direction has a deity and a jamu,” he explains. “If you see the body as a temple, you know to bring it balance. Prayer, wisdom, and health: all are equally important.”

Menu favourites include the Raw Lumpia, and the Balinese Tapas. Cold soups such as lemongrass and coconut are refreshing on a hot tropical day, and warm soups like Broccoli and Kale nourish and warm the body. Chef Arif’s dazzling menu is inspired by his grandmother’s Indonesian cooking, but the selection is truly international, with Japaense soba buckwheat noodles featuring in one popular salad, and the Mediterranean Citrus Almond Cous Cous ever-popular with diners.

Desserts: Kaffir Lime Tart, Strawberry Cheesecake, Chia Pudding, and many more. Enjoy a five course meal at Fresh, at lunch or dinner seven days a week, overlooking the impossibly beautiful tranquility of Taksu’s aquaponic gardens.
